The pizza at Il Purgatorio has potential. I remember saying that before about Pizzeria Spera, and, in fact, the pizzas are somewhat similar. Both have thick, saltless crusts. And they could be so much more! At Purgatorio, they could be a little more generous with, yes, the salt, but also the mozzarella. Even the tomato sauce was a bit lacking. I felt like I was just gnawing on some flavorless, chewy bread. The crust was strange with some parts having a rubbery/waxy or undercooked look, while other parts were super burnt. Don't know how they pulled that off! The devil must have been fooling around with that pitchfork! A fitting name for this pizzeria: it's not hell, but it certainly is no heaven either.

La buona volontà c'è: vogliono fare una pizza stile Napoli e la strada è quella, cioè crosta alta e ingredienti con una loro dignità. Quando abbiamo ordinato la pizza, il gestore ci ha chiesto, con un mezzo sorriso, se andava bene l'impasto a lievitazione naturale, per mostrare la sua conoscenza tecnica su come si fa la vera pizza. Poi però tra il dire e il fare...la crosta è alta, è in effetti la parte più buona, ma c'è qualcosa che non torna con il sale. La mozzarella è insapore e poca, il pomodoro niente di eccezionale. Si mangia così la pizza senza avvertire bene il sapore, non sa di fresco, non si capisce bene, è anonima. Via, da oggi mi comporterò meglio, punto al paradiso.
